ISRAELI OATMEAL PANCAKES

I was on my way to my first grade reunion in Israel. On the plane I leafed through an Israeli paper and saw this recipe. It sounded delicious, and it IS. Healthy, too...

1 cup oatmeal

¾ cup all–purpose flour

1/3 cup sugar

1 heaped tablespoon baking powder

½ tsp. cinnamon

1 egg

¾ cup skim milk

2 tbsp. canola oil

Process dry ingredients in food processor. Add remaining ingredients and mix until combined. Heat skillet and spray with Pam. Pour ¼ cup of the pancake mixture in the skillet. When bubbly turn over for another minute. Serve immediately.

I garnish with acacia honey and strawberries.
